These melt in your mouth...
Ingredients:
250g (90z) Butter
2 Tablespoons Icing Sugar
1 Egg Yolk
1 Teaspoon Vanilla Essence
1 Tablespoon Brandy (or Port)
300g (10 1/2 oz)Plain Flour (all purpose flour)sifted
1 Teaspoon Baking Powder
How To:
Preheat oven to moderate. Line a baking tray with baking paper.
Beat butter with mixer for 8-10 mins until butter is very pale and thick. Add the 2 Tablespoons of Icing Sugar, beat in well. Add egg yolk and vanilla. Add brandy. (I change the beaters to the pastry beaters on my mixmaster now.) Sift in flour & baking powder till you have a thick dough that is hard to mix. Scoop up mixture gently and cover in plastic wrap and place in refrigerator for around 1/2 hour.
You can either take small pieces of pastry and roll into balls with your fingers then flatten with a fork, or I use a heart shaped cookie cutter and press the mix out then cut. Some people shape the short breads into crescent moon shapes.
Place on baking tray and bake for around 20 mins till lightly golden. Dust heavily straight away with icing sugar (traditionally they are buried in icing sugar).
