These are dynamite for cashew lovers. I even entered a batch of these cookies in the Western Washington State Fair a few years ago and it won a blue ribbon.
Heat oven to 325°
Makes 4 dozen

½ cup butter softened
1 cup brown sugar – packed
1 egg
½ tsp vanilla
2 cups flour
¾ baking powder
¾ tsp baking soda
¼ tsp salt
1/3 cup sour cream
1-1/2 cup salted cashews – coarsely chopped
Cream together butter and brown sugar. Add egg and vanilla and mix well. Add remaining ingredients and blend. Stir in cashews. Drop cookies by teaspoonful on an ungreased baking sheet. Bake 12 to 15 minutes. Cool on rack, then frost with brown butter frosting.
Brown Butter Frosting
Melt ½ cup butter in a saucepan over medium heat until lightly browned. Blend with 2 cups powdered sugar. Stir in 3 Tblspn cream (or milk) and ½ tsp vanilla until smooth and of spreading consistency.
