    Banana Bread

    I love banana bread and have been trying to find a good recipe.  Most were just ok until I stumbled upon this one.  Made it yesterday.  Only thing I did differently was to coat the pan with cinnamon sugar before pouring the batter into the pan.  I didn't have a 9x5 loaf pan, used two 8x4 loaf pans.  I think that was probably better because lots of times the big one doesn't get real well done in the center for me.  I really liked this recipe, hope you will too.

    Q's Banana Bread

    3 large ripe bananas
    1 cup sugar
    1/2 cup brown sugar
    1/2 cup milk
    1 egg
    4 tablespoons butter (melted and cooled)
    1/2 cup chopped pecans or walnuts or both (i used a tad more)

    Mix all together and set aside.

    1-1/2 cups of flour
    1 tsp salt
    1 tsp baking soda

    Mix together, add to above mixture and pour into a 9 by 5 loaf pan, lightly greased.

    Topping:

    1/2 cup chopped walnuts or pecans or both
    1/2 cup brown sugar

    Mix together and sprinkle over loaf.
    Bake 325 degrees for 55 to 60 minutes. She said sometimes it takes longer. Press down on top of loaf; it's done when no longer "soft" -- her words!
